The Sun Jewel also known as a Korean Melon is a little Asian melon that has a pale yellow/white flesh that tastes similar to a honeydew but with more of a cucumber/pear flavor. Depending on the stage of ripeness it truly effects the flavor. These guys pair well with a spicy salsa or filled with a sherbet or Greek yogurt and topped with granola. They are simply delicious though just sliced and eaten by themselves.
