This is our family recipe for Welsh Cakes. Like a shortbread, these are cooked on top of the stove, not baked in the oven. Welsh miners put these energy-filled snacks in their pockets when they went down into the mines. Not overly sweet, they are wonderful with hot coffee or hot tea!
Ingredients: pastry flour, lard (lard & hydrogenated lard, BHA, propyl gallate & citric acid), sugar, currants, eggs, baking powder, cream of tarter, vanilla, soda, nutmeg
