Boniato – Often called "Cuban" sweet potato, this variety is becoming a favorite. It is often used in many Caribbean cuisine recipes. It has a mild sweetness, a dry texture, and a slightly nutty flavor. The white sweet
potato typically has less sugar than the orange varieties.
They also are higher in fiber and lower in beta carotene.
They are perfect for roasting, baking, frying and mashing.
